INGREDIENTS FOR TWICE BAKED POTATO CASSEROLE:
- 1/2-pound thin bacon
- 8 russet potatoes
- 3 tablespoons canola oil
- 2 sticks (1 pound) salted butter – Plus more for buttering baking dish
- 1 cup sour cream
- 1 cup grated Cheddar or Jack cheese (or a mix of both), plus more for topping
- 1 cup whole milk
- 2 teaspoons seasoned salt
- 3 green onions sliced
- kosher salt
- Freshly ground black pepper
Ingredients for Mac & Cheese:
- 1 lb. Velveeta processed cheese – cubed
- 16 oz. pepper jack cheese – shredded from block (pre-shredded cheese is not recommended for this recipe)
- 8 oz. cream cheese
- 1 cup milk (more can be added if desired)
- ½ cup grated Parmesan cheese (from the green can)
- 1 cup breadcrumbs
- 1 stick butter – melted
- 1 lb. box elbow macaroni cooked according to package
