INGREDIENTS FOR TWICE BAKED POTATO CASSEROLE:

  • 1/2-pound thin bacon
  • 8 russet potatoes
  • 3 tablespoons canola oil
  • 2 sticks (1 pound) salted butter – Plus more for buttering baking dish
  • 1 cup sour cream
  • 1 cup grated Cheddar or Jack cheese (or a mix of both), plus more for topping
  • 1 cup whole milk
  • 2 teaspoons seasoned salt
  • 3 green onions sliced
  • kosher salt
  • Freshly ground black pepper

Ingredients for Mac & Cheese:

  • 1 lb. Velveeta processed cheese – cubed
  • 16 oz. pepper jack cheese – shredded from block (pre-shredded cheese is not recommended for this recipe)
  • 8 oz. cream cheese
  • 1 cup milk (more can be added if desired)
  • ½ cup grated Parmesan cheese (from the green can)
  • 1 cup breadcrumbs
  • 1 stick butter – melted
  • 1 lb. box elbow macaroni cooked according to package
