20220206 In the Kitchen with Courtney and Kerry

Making southwestern eggrolls with optional avocado ranch dip. Items needed:
• 8 oz. chicken breast, cooked and shredded
• 1 tbsp. oil
• 1/4 cup red bell peppers minced
• 1/4 cup minced green onions
• 1/2 cup frozen corn
• 1/2 cup canned black beans, rinsed and drained
• 1/4 cup frozen spinach, thawed and drained
• 2 tsp pickled jalapeno peppers, chopped
• 1 tsp taco seasoning
• 3/4 cup shredded Monterey Jack cheese or cheese of your choice
• 8 7-inch flour tortillas
• oil for frying
• parchment paper lined sheet pan or air fryer

Avocado Ranch Ingredients:
• 1/4 cup smashed fresh avocados (about half of an avocado)
• 1 package ranch dressing mix
• 1/2 cup buttermilk
• 1/2 cup mayonnaise

Toppings:
• 2 tbsp chopped tomatoes
• 1 tbsp chopped onions
