20220123 In the Kitchen with Courtney and Kerry

Courtney made her favorite chicken curry recipe.
Ingredients needed:
·       1 LB boneless skinless chicken breasts or thighs cut into 1-inch pieces
·       2 teaspoons curry powder
·       1/1/4 teaspoons cayenne pepper (optional, to taste)
·       3/4 teaspoon salt
·       1/4 teaspoon pepper
·       1/2 cup chopped onion
·       1 tablespoon canola oil
·       1 (13 oz.) can coconut milk
·       2 tablespoons tomato paste
·       3 cups fresh baby spinach
·       1 cup chopped tomato, or 1 can diced tomatoes
·       2 cups cooked rice
